This coconut granita is a cold, creamy dessert perfect for summer. Not only does it taste delicious on its own, but it’s also easy to add toppings like chocolate sauce, roasted nuts, or fresh fruit, especially when you’re serving guests. It consists of only three ingredients and only a few minutes of preparation time – perfect for lazy summer nights.

  1. Combine coconut milk, sugar, and salt in an 8×8 Pyrex pan or other freezer-safe dish that is wide and shallow. Use an immersion blender to blend until the mixture is well blended and fully emulsified. Alternatively, you can blend the ingredients in a blender or food processor before adding them to the pan.

  2. Cover and freeze for 30 minutes, then remove from the freezer and run a fork through the mixture to break up any frozen clumps and bring the frozen chunks into the center. Be careful to scrape the outside edges of the pan where the mixture is most frozen. Return to the freezer and repeat this process every 30 minutes for about 3 hours, or until the granita is completely frozen, light and fluffy.

  3. Serve with chocolate sauce, nuts, fruit, or your choice of toppings.
