Time to talk about Leftovers Day! This is a little creation my family calls Mashed Potato Pizza. This leftover dinner only uses 3 ingredients not leftover from Thanksgiving dinner and is my favorite way to use left over mashed potatoes. Everyone can customize their own pizza, and it’s a fun way to get the kids to try new pizza toppings.
1 can refrigerated pizza dough, regular/pan crust
1-2 cups shredded cheese
1/2-1 cup Bacon, cooked crispy and diced
Whatever else you like
Pre bake your pizza dough about half way through, according to package instructions, you’re going to want to make sure to get a pan crust, not thin. Cook and chop bacon if you haven’t already. Now it’s time to warm your mashed potatoes, this can be done in the microwave. Be sure to add a little milk to help loosen them up, stirring frequently until smooth and warm. Spread a healthy amount of mashed potatoes like you would pizza sauce across the dough, then top with cooked chopped bacon, your favorite leftovers and cheese. Ours was leftover turkey, stuffing and gravy, topped with plenty of cheese and baked until the crust is done. I then added some cranberry sauce to finish it off. This pizza will take a little longer to cook through once you add all your mashed potatoes and toppings, but you’re going to want a crispier crust to hold up to all those heavy toppings. Once cooked through, eat and enjoy.
I love this tradition in our household, it’s a fun play on leftovers that’s not what you’d usually make. Also, by leaving off the bacon you can keep this vegetarian to appeal to more family members. My tip for this one, cut your pizza dough into 2-4 pieces after the pre baking step to make individual pizzas each family member can personalize. This way everyone gets their own favorite leftovers on their pizza. There you have it! Just when you thought Thanksgiving couldn’t possibly have any more carbs, we turn it into a pizza!
