Who doesn’t love chips and queso?? A fellow Mommy Spicer and I have been known to put away some queso and wine many a nights 😂 Thus this little recipe was born. I really love this jarred queso she introduced me to and I think it’s just as yummy as a lot of other popular warm cheese dips. However, as is my issue with most queso, it was missing texture. With 5 quick minutes you can upgrade this queso and have a heartier dish you can feel just a little less guilty about devouring.

1 jar medium queso blanco dip
1 tablespoon olive oil
1/2 an onion, diced
1/2 a red bell pepper, diced
1 garlic clove, minced
1/3 cup frozen corn
1/4 teaspoon chili powder
1/4 teaspoon cumin
2 scallions diced, white and green parts
1 tablespoon fresh jalapeño, minced
Chips for dipping!
In a medium size frying pan, heat olive oil over medium heat then sauté onion, red pepper, frozen corn, garlic and spices for 5 minutes. While the veggies soften, chop scallion and jalapeño and place aside. Pour queso in a microwave safe bowl, add in onion and pepper mixture and stir. Heat queso in microwave in 30 second intervals stirring frequently until desired temperature is reached. Then top with your scallion jalapeño mixture and enjoy!
My tip for this one is to get a mini crock pot and skip the microwave all together. This little crock pot here is a very affordable little investment. Think of all the yummy dips and appetizers you could make and now keep warm through any get togethers, birthday parties or footballs games.
