Anyone else feeling low on energy? Most kids are on spring break this week and are off from school. I don’t know about you guys, but I need all the help I can get in the energy department! These little bites are the perfect snack or quick breakfast, packed with protein, fiber and sweet enough to feel like a treat. Only 6 ingredients and they come together quick with no baking!
Just so you know, I’ve linked some products and or ingredients I believe in and use myself, however I could collect a percentage of sales. At Mommy Spice we’re all a team in making meals and staying on budget and I hope you love the things I recommend as much as I do.
1 cup old fashion oats
1/2 cup ground flax seed
1/2 cup Nutella
1/3 cup honey
1/2 cup chopped nuts (I used honey roasted peanuts)
1/3 cup Rice Krispies cereal
You heat the Nutella and honey in a small sauce pot, over low heat on the stove until just warmed and smooth, 3 minutes should do. Then, mix that together with all the dry ingredients and roll into 1 inch balls, I usually like to put mine on a baking sheet lined with either parchments paper or wax paper. Once done, put them in the fridge to set, about 30 minutes or so, then transfer them into an air tight container to store in the fridge, they keep for a week to 10 days.
Quick tip for these is to spray your measuring cup with PAM before pouring in the Nutella and honey, this makes it a lot easier to come out and to clean. Also fun fact, honey never goes bad. Even if it’s all crystallized, you can see mine was a little in the above picture. Just heat up a mug about half full of water, until hot but not boiling, then place your container of honey into the hot water. Be careful not to overfill the mug and splash any hot water out. After a few minutes your honey will return to its original consistency and be ready to use for whatever you need!
