Let’s talk zucchini. I know a lot of you guys are interested in the keto recipes I’ve made for my husband. Zucchini is a huge staple in keeping his meals streamlined with what I’m already making the family.
Just so you know, I’ve linked some products and or ingredients I believe in and use myself, however I could collect a percentage of sales. At Mommy Spice we’re all a team in making meals and staying on budget and I hope you love the things I recommend as much as I do.
I prepare the zucchini one of three ways. One, as zoodles, I usually use my spiralizer for this, however a potato peeler works in a hurry. Two, zucchini rounds, either grilled or baked. And three, zucchini boats, for this you just slice the zucchini in half lengthwise and scoop out the inside to the desired thickness, and then steam them in the oven. Zucchinis hold a lot of moisture, this is a problem particularly when using the zoodle method. If you have the time, once you’ve got your desired faux noodle shape you can salt the zucchini and let it rest for 20 minutes. The salt will extract the moisture and you can then wring them out and just throw them in the sauce to cook and it won’t water it down. I normally don’t have an extra 20 minutes when making dinner so I toss the zoodles in olive oil with salt and cook them in a separate pan from the sauce, then I’ll drain them and build my husband’s plate from there.
Zoodles also tend to be very long, so you may want to cut them down in size, either before or after cooking will work. I very regularly use zoodles in all of my pasta dishes. Spaghetti and meatballs, alfredo, macaroni and cheese, you name it and zoodles will work just like regular noodles. This is a really nice way to incorporate Keto into everyday cooking for the rest of the family, you’ll only be dirtying up one additional pan to cook them in. Another plus, the cheesier the sauce is the better, cheese is Keto!
Grilled or baked zucchini rounds are another way to use this awesome vegetable. A simple olive oil, salt and pepper toss and they can go right on the grill or into a frying pan. I’ve also made Keto pizza bites, if you can find the perfect size zucchini your pepperoni will cover the whole pizza bite perfectly, and when it comes to pizza, toppings are everything, so the more coverage the better!
Zucchini boats are a life saver in Keto! So many times I will be making the weekly menu plan and think, how can I make this dinner work for my husbands diet? Zucchini boats to the rescue! Whenever you need a vessel, zucchini boats are the perfect low carb substitute. I often use them to supplement bread, for example, when making sloppy joes for dinner, my husband cannot have the rolls so the zucchini boat acts as a great way to keep the meal together and make it a little more uniform, rather than just a pile of the meat mixture on a plate alone. These boats are also great to hold taco or enchilada mixtures, chili and buffalo chicken.
